Blueberry Panna Cotta for: Sereyleak "Lea" Pen



Today we are celebrating real estate expert Lea Pen's birthday by sharing this elegant Blueberry Panna Cotta recipe picked out just for her!





Blueberry panna cotta


Ingredients for purple panna cotta:

For the syrup:


150g blueberries (fresh or frozen)

40g sugar

Juice of half a lime

30ml water

For the panna cotta:


200ml cream

40g sugar

3 sheets of gelatin

3-4 tsp blueberry syrup (depending on how intense you want the color)

For the decoration:


a few fresh blueberries (approx. 8)

Mint leaves


Preparation:


For the syrup: Put all the ingredients for the syrup in a saucepan and bring to the boil. When the blueberries get a little mushy, mix everything briefly and simmer until it becomes thicker. After about 10-15 minutes, pass through a sieve and set aside.

For the panna cotta : Put the ingredients for the panna cotta in a saucepan and bring to the boil. Meanwhile soak the gelatine in cold water. When the cream mixture is boiling, take the pan off the heat, squeeze out the gelatine and add it. The gelatin should dissolve while stirring. For the color, add some of the blueberry syrup to the cream mixture (not everything, you need something for the decoration.

Fill the mixture into 2 glasses and stir min. Chill for 4 hours until the mixture is firm. Serve them with the rest of the blueberry syrup, a few fresh blueberries, and mint leaves.

Tip: If you like, you can also use other fruits or berries.
