Cooler temperatures, falling leaves, comfy sweaters --- all are welcome sights this time of year! What might be the most exciting about fall though? The recipes that come with it! We're talking spices, pumpkin treats, decadent desserts and pies galore. Here is a favorite that won't last long on your countertop. These cookies are so cozy with their pumpkin spicy goodness and a MUST bake every fall. So scrumptious, you will want to make them year round. (shhhh! we won't tell) It's not truly fall until that can of pumpkin is cracked open, so let’s get started!
Pumpkin Chocolate Chip Oatmeal Cookies
2 cups all purpose flour
1 teaspoon baking soda
2 teaspoons ground cinnamon
1 teaspoon pumpkin pie spice
1 teaspoon salt
1½ cups old fashioned oats
1 cup butter, room temperature
¾ cup brown sugar
½ cup granulated white sugar
1 cup pumpkin puree
2 teaspoons vanilla
1 cup chocolate chips
Prep by preheating the oven to 350 degrees and greasing your cookie sheets.
In medium bowl, combine: flour, baking soda, cinnamon, pumpkin pie spice, salt, and old fashioned oats.
In separate large bowl, mix: butter, brown sugar, and white sugar. Once fluffy, add the pumpkin puree, egg and vanilla. Beat until just combined.
Combine dry ingredients into large bowl with wet ingredients.
Add chocolate chips. Stir until chips are evenly distributed.
Drop by spoonfuls onto your cookie sheet and bake for 13-15 minutes.
Makes about 24-30 cookies depending on size.
