Blackberry Crumble Pie, Oh My!

We are celebrating September birthdays for our John L. Scott Bothell and Mukilteo real estate professionals by sharing this Blackberry Crumble recipe! ENJOY!




Blackberries. Juicy, soft, bursting with a tangy sort of sweetness. What to do with lots of blackberries? Make Blackberry Crumble! Sweet blackberries nestled between a pie crust bottom and a crispy oatty crumble topping is perfect with ice cream!

Quick tip: Instead of the classic Vanilla Ice Cream, try Lemon Sorbet - you will not regret it.


Crumble

1 cup flour

½ cup brown sugar

½ cup rolled oats

½ tsp cinnamon

¼ tsp kosher salt

½ cup butter, softened


Filling

6 cups blackberries

¾ cup sugar

¼ cup cornstarch

½ tbsp lemon juice


Directions:

  1. Start with a prepared pie crust. Whether store bought or a recipe of your own - either will work great!

  2. Make the crumble: In a large mixing bowl, toss all dry ingredients together. Using your fingertips, blend butter into dry ingredients until course lumps form. Set aside.



3. In another large mixing bowl, toss the berries with sugar, cornstarch and lemon juice.



4. Pour the berry mixture into prepared pie crust.



5. Sprinkle crumble all over top of filling. Bake pie at 350 degrees for 45-55 minutes until berries are bubbling and crumble is browned.


Cool completely before slicing & enjoy with your favorite frozen ice cream.
